I had the honour to try learn some techniques of this one from MOF Chef Bruno Montcoudiol during my training at ENSP- Ducasse Edu. Rouge is my ode to Parisian patisserie - a cake that feels light yet indulgent, with the surprise of raspberry cutting through the richness. It’s refined, feminine, and timeless.
